On the campfire … one of our favorites is hobo pies.
Lay out a sheet of heavy duty aluminum foil, crumble ground beef, mixed veggies (frozen is best). I add diced potatoes. Drizzle with olive oil, salt, pepper, season to taste (I like Italian seasoning). Wrap in foil and lay on a bed of coals. Cook about 20 min per side, depending on your fire. If you are in a hurry, you can bury it in coals and cut the time in half. It’s also good with sausage, chopped brat, or cubed chicken. No dirty dishes. At home, you can do them on the grill, or in the oven at 400. We do individual pies. If you go big, add more time.
These are nice after sitting in a cold blind all day. You can make them ahead of time, but make sure they stay chilled until you are ready to cook.
