Will the OEM U-notch irons line up properly with an EPS Carry using a C&H mount?

You can but it all comes down to the height of the plate. In my experience, the U-notch was just low enough for me to see the very top of the front sight in the window but still functional as a backup. On a different gun with a taller plate, the irons were practically hidden behind the optic.

If I use a dot sight, I really value having irons that are there when I need them, even if it’s just for a lower-third view. Also, I'd change out the stock sights for a set designed for optic-mounted slides. Something straightforward, not too tall, but just high enough to have a solid backup.
